Western style braised goby fish

Firm, not broken fish with a strong flavor, together with the thicken broth, boiled vegetables served a very delicious braised dish.

Ingredients

  1. 500 g goby fish
  2. 1 fresh coconut’s water
  3. 3 - 4 shallot
  4. 3 - 4 cloves of garlic
  5. 3 - 4 chili peppers
  6. Pork crackling or lard.
  7. Seasoning: fish sauce, salt, sugar, pepper

Methods

Mix the stock sauce including: 2 -3 teaspoons of fish sauce, 1 tablespoon of stock color water (stock), 1/2 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of pepper, 1/ 2 teaspoons of seasoning or seasoning. Add 1 cup (small bowl) of hot fresh coconut water, stir until the sauce is dissolved. Adjust the sauce according to the taste.

Dried onions. Peel garlic, thinly slice. Wash scallions, cut into pieces, smash the head.

Clean goby fish, wash with rice water (or dilute salt water with lemon to de-fishy), drain well or pat dry. Fry the pork fat with onions, garlic, and scallion’s heads, then fry the fish until it's delicious.

Add the stock sauce mixture until it covers the surface of the fish. To prevent the clay pot from cracking during braising, the secret is to initially keep the fire low, then gradually increase the heat. When boiling, lower the heat and simmer until the fish is soft and add all the spices, helping the fish firm and harden.

Season again and braise until the fish is firm, rich in spices, the broth is thick, pour a little more lard and cracklings to make the fish shiny, add scallions, sprinkle with pepper to complete.

Requirements for the dish: The fish is firm, not broken, rich in taste, the broth is thick and when it is dipped with boiled vegetables it can be served like a braised dish which is very delicious.

Notes:

  • To remove the fishy smell of goby, you should wash it with dilute salt water and lemon or rice water.
  • Fry the onion, garlic and then briefly fry the fish is also a way to make the fish more delicious.
  • When the stock sauce is almost dry, add boiled water to continue braising. Do not add cold (not boiled) water because it will make the goby fish fishy and soft.
